The only one on the Steam page that has the ALL the currently released content (all expansions + living world packs) is the $80 pack. If you decide to buy the 2 other DLCs separately you will have to purchase the living world packs from the game's Gem Store as there is no other way to separately purchase living world content on the Steam Page
The full game is 50-60ish GBs. However regular patches sometimes update previous content that replaces previous downloaded data. So no, we can't tell you how much you will still be needed to download after a first install from steam, but we can guarantee you that it will not use up more that 70 gigs of harddrive space.
If you want to be sure to have all clean without downloading everything, just delete all except gw264.exe and gw2.dat, when you run it again it will download all the normal files again. Make a copy of your shortcut name it gw2 repair. Rename the dat file so you keep it as backup. Open the shortcut and add -repair to the command line.

If there's nothing funky going on, you should be able to just download the launcher for GW2 from Steam, and then redirect the game to use your non-steam installation instead, by using this in your launch parameters: "FULL PATH TO GAME.EXE" %command% Or as an example: "C:\Program Files (x86)\Guild Wars 2\Gw2-64.exe" %command%
